Turmeric Lentil Soup with Coconut Milk- recipe
- 1 teaspoon turmeric powder
- 1 1/2 cup coconut milk
- 2 apples, cored and grated
- 2 cups red lentils
- 1 teaspoon coconut oil
- 1 teaspoon cumin
- 1 onion, diced finely
- 1 1/2 teaspoon cinnamon
- 1 teaspoon salt
- 2-3 cup hot water
- black pepper to activate the curcumin
Method of preparation:
You should initially rinse the red lentils with cold water. Leave them to drain, and melt the coconut oil in a pot and sauté the onions until they become soft and golden.
Next, add the turmeric and apples, and cook the mixture for 2 minutes. Stir frequently, and add the water and the lentils. Boil the mixture, cover the pot and then simmer for 15 minutes.
Then, add the coconut milk and the spices, and simmer until the lentils are soft. Add a cup of water if you prefer it thinner, and leave it to simmer for 2 more hours.
You should serve the soup warm, and you should garnish it with pumpkin seeds and coconut shavings.
